100% Gamay. All organic. Mee is a one woman show. She does it all. Grows, harvests, makes, and sells her wine. Before owning a domaine, Mee Godard trained at Oregon State and Montpellier. She had worked at Maison Chanson, Domaine des Comtes Lafon and Château de Corton-André. She likes to use both carbonic and non-carbonic maceration methods. Unlike standard fermentation, where yeast is added to grape must in order to convert the sugar into alcohol, carbonic maceration does not use the yeast to start the fermentation process. Instead, the grapes are placed inside a sealed vat and filled with carbon dioxide where the fruit will release enzymes that are naturally present. These enzymes will break the sugars down into alcohol. Mee had moved to Beaujolais in 2013 and established her domaine. She has 5 hectares of vineyards in three special single vineyard sites or “climats”: Corcelette, Grand Cras, and Côte du Py. The Corcelette has southeast facing granite slopes and 70 year old vines. Earthy and extremely refreshing, a perfect balance of gravel and tart red fruits.
